In older times, Poles believed that when a guest entered their house, they were blessed. To this day, Poles love to serve their traditional dishes, made from natural ingredients, to foreign guests. Various regions have their own specialities: Northern Poland, where lakes abound, specialises in fish dishes, Mazowsze is famous for sour rye soup and dumplings, Wielkopolska prides itself in duck dishes, Silesia in roulade with dumplings Silesian style, Podhale at the foot of Tatra Mountains in sheep's milk smoked cheese (oscypek) and all around Poland various meals are accompanied by sour cabbage and cucumber as well as pickled and dried mushrooms.
